Asparagus in prosciutto with beurre blanc

Ingredients

For the beurre blanc

  • 2 banana shallotsor 4 small shallots
  • 100ml/3½fl oz dry white wine
  • 250g/9oz good quality unsalted butter, cold, cut into 1cm/½in dice
  • salt and freshly ground black pepper
  • ½ lemon, juice only

For the asparagus

  • 6 spears fresh asparagus
  • 6 slices prosciutto (such as Parma ham, San Daniele ham or Serrano ham)
  • 1 tbsp olive oil
