Lardy cake

This recipe has a generous amount of dried fruit in a rich dough that’s lighter and less sweet than most shop-bought lardy cakes.

Ingredients

  • 450g/1lb strong white flour
  • 1 tsp salt
  • 2 x 7g sachets instant yeast
  • 75g/2½oz lard
  • 300ml/10½fl oz water
  • 75g/2½oz butter
  • 225g/8oz mixed dried fruitincluding mixed peel
  • 50g/1¾oz soft brown sugar
  • extra flourfor dusting
