Sausage and bacon rustic hotpot

Warm up with this homely, comforting bean and sausage hotpot served with melting cheese toasts.

Ingredients

  • 2 tbsp olive oil
  • 2 pork sausages
  • 150g/5oz small button mushrooms
  • 2 rashers smoked back bacon, roughly chopped
  • 1 smoked garlicclove, roughly chopped
  • 1 large leek, sliced
  • 4 tomatoes, peeled and chopped
  • 4 tsp tomato purée
  • 570ml/1 pint beef stock
  • 1 x 400g/14oz can cannellini beans, drained
  • ½ x 400g/14oz can kidney beans, drained
  • 1 small head broccoli, cut into florets
  • 1 small baguette, thinly sliced
  • 40g/2oz medium strength cheddar
  • handful parsley, chopped, to garnish
