Speedy miso noodles with soft boiled egg

Perfect for when you want a tasty and filling meal but you haven't got much time.

Ingredients

  • 1 free-range egg
  • 1 tbsp groundnut oil
  • 50g/1¾oz chestnut mushrooms, sliced
  • 2.5cm/1in piece ginger, grated
  • ½ small garlicclove, grated
  • pinch chilliflakes
  • 2 spring onions, sliced
  • 1 handful beansprouts
  • 1 tsp brown misopaste
  • 1 tbsp light soy sauce
  • 100g egg noodles, cooked to packet instructions
  • sea salt and freshly ground black pepper
